Brussel Sprouts

Roasted Sweet Potato

Toasted Walnuts (optional)

Feta (optional, exclude to make vegan)

Diced Apple

Pomegranate Seeds

Roasted Butternut Squash cubes

1/2 cup orange juice 
Zest of one orange 
1/2 cup balsamic vinegar 
2 tbls pure maple syrup 
1 clove minced garlic 
1 tbls dijon 
1/2 tsp kosher salt 
1/2 tsp freshly cracked pepper 
3/4 cup olive oil 

Put all ingredients in a jar and shake until fully combined.

My Favorite Holiday Salad Dressing:

1/2 cup orange juice

Butternut Squash Bisque

"Just about any vegetable can be transformed into a smooth pureed soup," says Susan Spungen. Besides this Butternut Squash Bisque, also try her Wild Mushroom Bisque , Sweet Corn Puree or Green Pea Puree !
Servings: Serves 4–6
Ingredients
  • 1 medium butternut squash (about 2 pounds)
  • 1 tablespoon olive oil
  • 1 yellow onion , cut in half and thinly sliced
  • 1 stalk celery , thinly sliced
  • 1 carrot , thinly sliced
  • 1 teaspoon fresh rosemary leaves
  • 2 cups chicken or vegetable stock
  • 3/4 cup milk or cream
  • 1 1/2 teaspoons kosher salt
  • 1/4 teaspoon freshly ground pepper
  • Directions
    Peel squash and remove seeds. Cut into 1 1/2-inch chunks and set aside.

    Add oil to a 4-quart saucepot and place over medium heat. Add onion, celery, carrot, and rosemary, and cook until onion begins to brown, stirring occasionally, about 15 minutes.

    Add squash, stock, and 1 cup water. Bring to a boil, then reduce to a simmer and cook until squash is tender, about 15 minutes. Turn off heat and let soup cool slightly, about 8 minutes.

    Using a standard or immersion blender, puree soup until smooth. If using a standard blender, puree in small batches to prevent spillage. Transfer to a clean pot or storage container. Soup can be refrigerated for up to 2 days or frozen for up to 2 months.

    When ready to serve, reheat. Add milk, salt, and pepper; stir well. Add additional milk or stock if soup is too thick; simmer 5 minutes. Adjust seasoning to taste, and serve warm.

    Corn Casserole (Paula Deen)

    Corn Casserole -

    Ingredients

    • 1 (15 1/4-ounce) can whole kernel corn, drained
    • 1 (14 3/4-ounce) can cream-style corn
    • 1 (8-ounce) package corn muffin mix (recommended: Jiffy)
    • 1 cup sour cream
    • 1/2 cup (1 stick) butter, melted
    • 1 to 1 1/2 cups shredded Cheddar (optional)

    Directions

    Preheat oven to 350 degrees F.

    In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter. Pour into a greased 9 by 13-inch casserole dish. Bake for 45 minutes, or until golden brown. Remove from oven and top with Cheddar. Return to oven for 5 to 10 minutes, or until cheese is melted. Let stand for at least 5 minutes and then serve warm.

    Julie's note - I like it without the cheese.

    1 small onion, chopped finely
    celery (tons)
    a few apples with skin
    "innerds" chopped, if desired (eeeew!!)
    butter
    stock

    Toss ingredients together

    Grandma's Wonderful Pink Salad

    Grandma's Wonderful Pink Salad - Goldie Albers 

    2 small pkg. strawberry gelatin 
    2 c. boiling water frozen strawberries (1 can?) 
    2 peeled, chopped apples (optional) 
    (pineapple?) 
    (mandarin oranges?) 
    1/2 pint whipped cream 

     Combine gelatin, water, and strawberries. Stir well. Fold in fruit and whipped cream.
